OK, I found a way to decompile the model into Maya and now I've flipped it and the textures too but how the hell do I recompile it into an .mdl?

Thats not true. You can simply change the direction its looking at in its properties. I've gotten the result you wanted with doing just that without it being switched.
Oh really? I've tried a million times in Hammer and still can't figure it out but by all means please send me the .vmf if you have gotten it to work.
