quick tut on how i go about making heads...
start of with zsphere, just think where you wanna have more resolution/control add in an extra zsphere...
base for a head:

make it a unified skin (or adaptive skin you can mess around see what works best for you)

make polymesh3D
use move brush to refine mesh

subdivide and sculpt

this tut was made in 10 min so don't shoot me for the result
