The way I am doing things like that is to model the shape of the grip with a plane (from the side), extrude the edges so you have a grip shaped box and then im chamfering the edges, so it becomes round.

What Ich mentioned is plane modeling. I think a lot of people don't particularly favor that method, I have had a lot of more experienced modelers recommend box modeling over plane modeling. I personally think both are good methods and can be used in specific situations to achieve positive results.

But anyway, the grip you're trying to model is relatively simple. I think you need to get some better reference shots. What you have currently isn't horrible, but it's simply impractical to use as your only reference. The gun is at an angle. You need an even side shot to get the basic shape, then you want various angled shots that show off all the curvature so you can shape properly. I'm still pretty new to modeling myself, but there used to be an awesome tutorial that walks you through modeling a beretta pistol using plane modeling. I think all the download links for the video are dead though.

Fuck using plane modeling, box modeling is always better IMO. Anyways, here is an example of a much more complex grip that I made using a cylinder that I extruded and scaled as I moved it to match the contours of my reference pictures.

Ignore the shit at the top and look at how I use the cylinder to create the handle. Basically I just scaled it on the x axis to flatten the cylinder and then started extruding. I then used a symmetry modifier to make it so that both sides match.

I think THIS is what he means by plane modeling. You have orthographic reference images of what you are trying to model placed onto planes and build the actual model in the center of it all.

From what you have in your screenshot, beveling some faces might get you to a finished product sooner. There are multiple ways to model anything, just go with what makes you feel comfortable.
